Arbre dioïque, parfois monoïque, rarement hermaphrodite, vigoureux.
Feuilles alternes, composées paripennées, persistantes, coriaces, glabres, à 4 à 10 folioles de 3 à 5 cm de long, cordiformes à obovales-oblongues, entières, à bords un peu ondulés, vert foncé dessus et vert clair dessous. Les petites stipules tombent très tôt.
Fleurs à symétrie radiaire, à pédoncule court, réunies en grappes latérales dressées qui prennent naissance sur les branches. Fleurs mâles ou hermaphrodites minuscules, vertes ou rougeâtres, à 5 étamines libres, étalées, longuement saillantes. Fleurs femelles réduites à un ovaire courbé surmonté d’un large stigmate. Pas de pétales. Calice à 5 sépales courts soudés à la base. Ovaire supère.
Fruits, gousses de 20 cm de long au maximum, de 10 à 20 mm de large, linéaires à oblongues, aplaties, pendantes, vertes puis pourpre brunâtre, à 2 à 16 graines ovoïdes brunes.

Tree dioecious, sometimes monoecious, seldom hermaphrodite, vigorous.
Leaves alternate, compound paripinnate, persistent, tough, glabrous, with 4 to 10 leaflets from 3 to 5 cm long, heart-shaped to obovate-oblong, entire, with rather undulate edges, dark green above and pale green below. The small stipules fall very early.
Flowers radially symmetrical, with short peduncle, joined together in erect, lateral racemes which emerge directly from the branches. Male or hermaphrodite flowers tiny, green or reddish, with 5 free, spread out, lengthily protruding stamens. Female flowers reduced to a curved ovary surmounted by a wide stigma. No petals. Calyx with 5 partly fused short sepals. Ovary superior.
Fruits, pods, 20 cm long at most, from 10 to 20 mm across, linear to oblong, flattened, hanging, green then purple brownish, with 2 to 16 brown ovoid seeds.

Ceratonia : emprunt du grec ancien κέρας, -ατος (nom) = la corne,
en référence à la forme des gousses de caroubier.
Siliqua : emprunt du latin siliqua, -ae (nom) = la silique,
nom donné à la caroube par Pline, naturaliste latin
mort en 79 apr. J.-C.
Ceratonia : borrowed from Classical Greek κέρας, -ατος (noun)
= horn, referring to the shape of the seed pods of the carob.
Siliqua : borrowed from Latin siliqua, -ae (noun) = siliqua, name
given to the carob by Plinius, Latin naturalist died in 79 AD.
